Recipe: Chicken lettuce wraps

Low carb option for dinner
These chicken lettuce wraps will soon become a family favorite. They can be customized to your family’s preference and are a great way to add more veggies into your diet.
Serves 6
Ingredients
- 1 tablespoon olive oil
- 1 cup sweet onion, diced small
- 1 tablespoon sesame oil
- 1-pound ground chicken
- 2 cloves garlic, minced
- ¼ cup hoisin sauce
- 2 tablespoons amino acids or light soy sauce
- ¾ tablespoon seasoned rice vinegar
- 1 tablespoon Sriracha
- 1 teaspoon fresh ginger, minced
- 1 can (8-ounce) water chesnuts, drained and diced small
- 1 bunch green onions, sliced
- ¼-1/2 teaspoon red pepper flakes to taste
- Shredded carrots, optional
- Salt and pepper to taste
- Butter leaves for serving
Directions
Heat olive oil in a large skillet. Add in diced onion and cook until softened.
Add ground chicken, garlic and sesame oil. Cook until the chicken is no longer pink.
Combine hoisin sauce, amino acids (or soy sauce), rice vinegar, Sriracha, ginger, water chestnuts, green onions (reserving some for topping the lettuce wraps) and red pepper flakes. Heat through and then taste and season with salt and pepper as desired.
Fill butter lettuce with chicken mixture and top with sliced green onion and shredded carrots if desired. Enjoy!
