Recipe: No cook fresh tomato sauce

Tomato sauce in a jiffy!
Do you have an abundance of tomatoes from your garden? You can use those or jarred tomatoes for this fresh tomato sauce.
Serves 4
Ingredients
- 2 cups diced tomatillo or Roma tomatoes
- 2 tablespoons fresh chopped basil OR parsley (or both if you’d like)
- 1-2 medium cloves of minced garlic
- 1 tablespoon coarsely chopped fresh thyme
- ½ teaspoon salt
- 1/8 teaspoon pepper
- Pinch of crushed red pepper flakes (optional)
- About 6 ounces of desired pasta/grain prepared per instructions
Directions
Combine all ingredients and let stand at room temperature for at least an hour (or make the night before and let stand in the refrigerator overnight).
Prepare desired pasta (or grain- bulgur, farro, etc.) and top with sauce.
