Recipe: Sweet potato custard

Sweet potato pie fake out.
Originating in the Southern United States, sweet potato pie is a traditional dessert often served around Christmas or Thanksgiving. This healthier version of that favorite holiday dessert will be a hit with the entire fam any time of the year.
Serves 6
Ingredients
- 1 cup cooked, mashed sweet potato
- ½ cup mashed very ripe banana (about 2 small)
- 1 cup evaporated skim milk
- 2 tablespoons packed brown sugar
- 2 beaten egg yolks (or 1 1/3 cup egg substitute)
- ½ teaspoon salt
- ¼ cup raisins
- 1 tablespoon sugar
- 1 teaspoon ground cinnamon
- Non-stick cooking spray
Directions
Preheat oven to 300 degrees.
In a medium bowl, stir together sweet potato and banana. Add milk, blending well. Add brown sugar, egg yolks and salt, mixing thoroughly.
Spray a 1-quart casserole dish (or smaller oven-safe ramekins) with non-stick spray coating. Transfer sweet potato mixture to casserole dish or ramekins.
Combine raisins, sugar and cinnamon; sprinkle over top of sweet potato mixture. Bake for 45 to 50 minutes in casserole dish or about 30 minutes in ramekins until a knife inserted near center comes out clean.
Enjoy warm or it can be refrigerated and eaten cold.
