Low-carb cinnamon pancakes
Sign us up for these good-for-you cinnamon pancakes. Perfect for any day of the week, but especially great for a weekend brunch. Yum!
Serves 3
Ingredients
- 3 eggs
- 6 tablespoons low-fat cottage cheese (for lower salt version use plain Greek yogurt)
- 3/4 cup old-fashioned oatmeal (or gluten-free oats)
- 1/2 tablespoon vanilla extract
- 1/2 teaspoon cinnamon
- 1 tablespoon sweetener of your choice (sugar, honey or other)
- Vegetable oil spray
Directions
Put all ingredients in a blender or food processor and process until smooth (if too thick, add 1 tablespoon of milk or soymilk). Heat skillet over medium heat. Spray with vegetable oil spray. Pour batter as you would for regular pancakes. Cook first side until it looks bubbly and a bit drier before turning. About two minutes for first side and one minute for second side.
